My parents just came to California for a long visit and it was the perfect time to get some marmalade secret recipes out of them 😊

Since I can remember, we always had fresh homemade marmalade on our table to eat and our basement was always stocked with some of the best flavors: prune, strawberry, peach, orange, pumpkin, blackberry, apple…

One of the sweetest memories I have was picking the prunes from our prune trees in our backyard to make our delicious marmalade that wasn’t neither too sweet nor sour but a fine combination of both.

During the month of August I also enjoyed picking blackberries with my dad from the wild native bushes that are abundant throw-out the local hills that would cover the backyard landscape of our home . He would make a genius hand bag by cutting a plastic bottle ¾ of the height and inserting a twine on each side so we could hang it on our neck.

Well let’s get to it… shall we?

The process is very simple and it can be done in about 1 hour. Perfect for a Sunday project.

Start by cutting the strawberries into little pieces and weigh them.

Add sugar and lemon juice.

Stir over medium-low heat until the sugar dissolves.


1kg organic strawberries

500 gr organic cane sugar

Juice of 1 lemon, organic



Large wide saucepan

Wooden spoon

Glass jar + airtight lid


  1. Cut the organic strawberries into small pieces.

  2. In a heavy wide saucepan, mix strawberries, sugar, and lemon juice.

  3. Stir over med-low heat until the sugar is dissolved while bringing the mixture to a rolling boil.

  4. Stir frequently mashing the strawberries as you stir, continuing to boil, until jam is thickened and bubbles completely cover the surface of the jam. (about 30 minutes.)

  5. Transfer jam to a sterile jar, seal it with an airtight lid, flip it upside down for at least 20 min and let cool to room temperature. This method (of flipping the jar upside down) will assure that the marmalade can be store for at least 3 months outside the fridge.


Add 1inch of water in the jar and microwave it for 3 min.
