Hello everyone and HAPPY FALL!
I am so excited to share with you one of my favorite raw cheesecake recipes!
I just made it a few days ago for my daughter’s FIRST birthday party and let me tell you…everyone loved it!! I did too!! Oh my god, I have some left overs in the fridge and I eat bites of it every day!
Anyway…Do you know what I like about it? The GUILT FREE TRIP I experience.
I feel GOOD with myself when Eating it! I am not eating starchy or processed food, I am not eating high sugary dessert ..it is WHOLE FOOD ! Low sugar, Lots of nuts, good fats, good protein for a HAPPY TUMMY!
And it is so yummy that you would want to make a few of them and leave them in the freezer for when you have cravings like me!
OK, let’s get to the recipe!
FOR THE CRUST:
1 CUP almond
1 CUP walnut
1 CUP dates
1/8 TSP Himalayan pink sea salt
** Notes: If the crust is too dry, add 1 tbsp of coconut oil**
FOR THE FILLING:
1 bag of Trader Joe's cashews (about 454gr= 4 cups, soaked)
1 tsp vanilla
1/3 cup maple syrup
1 can coconut cream (only the cream, not the liquid)
2 tbsp coconut oil
FOR THE TOPPING
1 cup dark chocolate chips
2 tbsp coconut oil
Begin by soaking the nuts. After they've finished soaking, prepare the crust.
In the bowl of a food processor combine dates, nuts, cacao powder and sea salt. Process until it holds together when you press it between two of your fingers. Set aside.
Begin the filling by slightly warming the coconut oil in a bowl of warm water (it melts at 77 degrees). In a Vitamix add cashews, coconut cream, coconut oil, maple syrup, vanilla and blend well (until completely smooth). Blend a little more, just to be safe. Press the crust evenly into the bottom of an 8-inch spring form pan (don't go up the sides). Pour the filling on top and freeze for 4 hours, or overnight.
For the topping begin melting the chocolate chips with the coconut oil in a container over a bowl of warm water and stir until everything melts.
Once the cheesecake is frozen, Take it out of the freezer, take the sides of the pan out and pour the topping over the top. It will freeze immediately. Top it with strawberries and let it sit in the fridge for about 1 before serving.
