Vegan Pumpkin Pie

This Pumpkin Pie is so easy to make! It requires just a few ingredients, and five minutes of your time to get it into the oven. Perfect for Thanksgiving!

I didn't grow up with pumpkin pie, in fact the very first time I tried it was during my first time visiting the US as a woofer. I was 18 years old ! Shocking, right?

But don't worry, I had plenty of delicious Italian desserts growing up!

I was hosted by a sweet family in Arkansas while woofing and I happened to be there during Thanksgiving time. Deeeeliciooouus!

Well, as you all know...Pumpkin pie is a staple at American Thanksgivings and Christmas. It is also one of the easiest pies to make and perfect for kids to help out with!

Here is the recipe for this delicious vegan pumpkin pie.

Ah, one more note before you all get started. I used monk fruit sweetener in my recipe but brown sugar works just fine.

Why monk fruit sweetener?

Monk fruit sweetener is made from the fruit's extract. The extract contains zero calories, zero carbohydrates, zero sodium, and zero fat.

Since monk fruit sweetener has zero calories or carbs, it will not raise blood sugar levels. Therefore, it may be a good option for people with diabetes.

Prep Time: 5 mins

Cook Time: 55 mins

Total Time: 60 min


  • 1 can of pumpkin puree

  • 1/3 cup of brown sugar or golden monk fruit sweetener

  • 1/4 cup of maple syrup

  • 3/4 cup of coconut milk

  • 1 teaspoon of vanilla

  • 1 1/2 teaspoons of pumpkin pie spices

  • 1/4 teaspoon of salt

  • 3 tablespoons of cornstarch

  • 1 unbaked vegan pie crust


  • Pre-heat your oven to 350 degree F. Prepare a pie crust in a pie plate.

  • In a high speed blender or food processor, combine all of the pie ingredients and blend until creamy and smooth. Should only take a minute. Pour into pie crust.

  • Bake in the oven for 55-60 minutes. The top should be firm and the crust should be lightly browned around the edges. If the crust begins to get too brown around the edges, cover the crust with foil. Once done, take out of the oven and let cool on the counter.

  • Cool completely before serving. Top with some whipped coconut cream and ENJOY!!
