January 2020 went by so fast and here we are, already in February.
I don't know if I told you guys but I have entered this year as a single mom!
Many of you already know what I am going through and I thank each one of you that has showed me support during the past months.
Life has been up and down...there are good days and bad days but there isn't one day that I am not grateful for the life and the beautiful children I have.
Despite the many sorrows my heart has, I choose to look up and learn from my experience because as the old saying goes.... "if it doesn't kill you, It will make you stronger", right?
Anyway, today I wanted to share with you my all time FAVORITE RECIPE for
AVOCADO CHOCOLATE MOUSSE
It is ....
creamy
nourishing
chocolaty
plant-based
gluten-free
& absolutely irresistible!
INGREDIENTS
5 avocados
3/4 cup of cacao powder
3/4 cup of maple syrup
1 tsp vanilla
4 tbsp coconut oil
pinch of pink Himalayan sea salt
DIRECTIONS
- Cut open your avocado, remove the pits and spoon out into the bowl of a food processor.
- Pulse for a minute or so, just to break them up a bit.
- Then add in the rest of the ingredients. Pulse for 2 minutes, or until well combined.
- Once the mousse is silky smooth, it is ready to serve!
Note: It is recommended to leave the mousse in the fridge for 1 hour or more before serving it.
