If you are always in a hurry, rushing to work, catching a class, have kids or just super busy, you probably struggle to give yourself a healthy breakfast or snack in the morning.
I think breakfast is the most important meal of the day and I couldn’t skip it for any reason. My day would get so imbalanced and my mind so foggy without it that I have made it a priority in my day. It is very important to begin the day by nourishing our Vata energy to stay focused and grounded throughout the day.
This is a easy healthy yogurt parfait recipe that you can pre-make and bring with you anywhere you go.

INGREDIENTS
8 oz Mason Jars
1 plain or your favorite Vegan Yogurt (my favorite is Kite Hill and Foragerproject)
Granola
Fresh fruit, berries
1 tsp of chia seeds
1 tsp of hemp seeds
PREPARATION
Fill each jar with yogurt. Add 1 tsp of chia seeds and mix well.
Top with a handful of granola.
Finish with a layer of fresh fruit and hemp seeds
Pop a lid on each jar and store in the refrigerator for up to 3 or 4 days depending on the ripeness of your fruit.
