Turmeric Roasted Cauliflower



Hi everyone,


I am here in Italy right now and the kids and I are having so much fun!


There is so much to see, so much to eat, so much to explore that I don't know if we will be able to do everything on our list. But we are super grateful we are here among friends and family!


The other night I had the pleasure to make dinner for my parents and they absolutely loved this recipe I am about to introduce you to!


I have been so spoiled by my parents who take care of most of the meals for us, which means.... I am not cooking as much as I am used to because they treat us with delicious authentic meals. I am also asking my mom to show me different recipes I have forgotten with time because, like most Italians love to think, "they know the only right way to cook and prepare meals"; therefore I am soaking it all up!


Anyway, let's go back to our delicious plant-based recipe that is:


-gluten-free

-dairy- free

- soy-free


INGREDIENTS

  • 1 head of cauliflower

  • 4-5 tbsp of olive oil or avocado oil

  • 1 tsp salt

  • 2 tsp turmeric

  • pepper to taste

  • 1-2 cup of nutritional yeast


PREPARATION


  • Preheat oven to 425 degrees F.

  • In a large bowl, use your hands to coat the cauliflower florets with the olive oil, salt, pepper, turmeric and nutritional yeast

  • Transfer to a baking dish large enough to accommodate the florets in a single layer (such as a 9 X 13 rectangular baking dish).

  • Bake the cauliflower for 30-40 minutes.

  • Serve the Parmesan roasted cauliflower immediately.
